Rose in Winter Apple Tarts

My friend brought these gorgeous rose-shaped apple tarts to a dinner party. I complimented her on her stunning dessert, and was blown away when she told me they were actually fairly simple to make and she would teach me. She proceeded to explain how to make them in just a handful of sentences. I have been making them ever since, with a side of cinnamon apple whipped cream that I devised to use the leftover apples and cinnamon sugar, which gets rave reviews for making this already crowd-pleasing dessert into even more of a hit.

  • 1 sheet puff pastry, thawed according to package instructions
  • 2 red or pink apples, cored and sliced into very thin slices
  • 1 TBSP lemon juice
  • 1 cup water
  • 4 TBSP sugar
  • 1 tsp cinnamon
  • 3/4 cup heavy cream
  • powdered sugar for garnish

Mix the lemon juice and water in a medium size bowl. Add the apple slices to the water as you cut them. Microwave for 2 minutes.

Mix together the cinnamon and sugar.

Roll the puff pastry into a 12×9 rectangle. Cut into 6 strips that are each 2×9.

On each strip of puff pastry, arrange the apples (with the skin side at the top) overlapping each other and just sticking up over the top edge of the puff pastry. Sprinkle each strip with cinnamon sugar. Fold the bottom half of the puff pastry up to hold the apples in place.

Roll the strip from one end to the other to create a rose.

Spray a 6-cup muffin tin with non-stick spray. Place each rose into the muffin tin. Refrigerate while you pre-heat your oven to 375 degrees F.

Bake 25 minutes, then cover with foil and continue to bake until the pastry turns golden brown (approximately 25 additional minutes).

While the apple tarts bake, sprinkle the leftover cinnamon sugar on any unused apple pieces and set aside. The leftover apples will release their liquid and you will end up with a yummy cinnamon apple syrup. When you are ready to plate your dessert, whip 3 TBSP of this syrup into the heavy cream until stiff peaks form.

Scoop some of the cinnamon apple whipped cream into the bottom of a dish. Nestle an apple tart into the cream like a rose in snow.
