Sesame Snow Pea Salad

Often snow peas come pre-packaged in a one-pound bag, so when I buy them to use in my Creamy Pea Salad (go here for the Guessipe), I end up with quite a lot leftover. I was looking for something other than stir-fry to do with them, and came up with a sesame salad that makes the most of these crisp sweet veggies. I don’t know why such a great vegetable seems to have such limited ways that it is used. This is fun and easy, and makes me wish snow peas were used in more varied ways.

Guessipe

  • 1 lb snow peas, thinly sliced
  • 1 TBSP sesame paste
  • 1 TBSP rice vinegar
  • 1 TBSP lemon juice
  • 1 TBSP brown sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp tarragon
  • 3 TBSP olive oil
  • salt and pepper

Thinly slice your snow peas lengthwise.

Snow Pea Salad

Mix together all of your other ingredients.

Snow Pea Salad dressing

Pour over your snow peas and stir to evenly coat. Salt and pepper to taste.
