I’m not a huge fan of pancakes, but there’s a cafe called Shoop’s in my neighborhood that does a savory pancake I can’t resist. When COVID closed everything down, I realized I could very easily re-create this at home. I swapped in cotija cheese where Shoop’s uses feta because that’s what I happened to have available, but I liked it so much that I’ve continued to use cotija instead.
Guessipe
- Pancake
- Fried egg
- Pesto
- Cotjia cheese crumbles
- Tomato pieces
Make a pancake. As I’ve mentioned, I’m not much of a pancake person, so if you have a favorite pancake recipe, use it! I’ve just been using a mix, but I’m sure you can do better 🙂

Place a fried egg on top of your pancake.

Drizzle pesto sauce over the egg. If your pesto is thick, add a little warm water to it.

Sprinkle with cotija cheese crumbles.

Top with tomato pieces. Pretty simple to throw together, but looks and tastes fancy enough to serve breakfast guests!
