One time I over-bought chives for a recipe and ended up with a leftover bunch. I happened to also have snap peas and a jar of seasoned crispy bamboo shoots, which I threw together in what came to be a favorite go-to veg dish that I’ve made again and again. Super simple to make, but so delicious and with fantastic crunch!
Guessipe
- 1 lb snap peas, cleaned and trimmed
- 1 bunch chives, chopped
- 1 jar seasoned crispy bamboo shoots
- 7 garlic cloves, minced
- 1 inch ginger, minced
- 1/4 cup oyster sauce
- salt to taste
- olive oil
Saute the garlic and ginger in a little olive oil until fragrant.
Add the snap peas, chives, and oyster sauce and cook while stirring for a couple minutes until the chives soften.
Add the contents of the jar of bamboo shoots, including all of the seasoned oil. Continue to stir and cook just until the bamboo shoots are warm.
Season to taste and enjoy the crunchy goodness!
