Cookbook Club – What’s For Dinner?
For May’s Cookbook Club, we used What’s For Dinner? by Curtis Stone. I chose the Spaghetti with Garlic, Lemon, Kale, and Parmesan. Go to my Cookbook Club site to see everything we had for dinner. For now – my dish!
When I saw this recipe, I could immediately imagine what it would taste like – the savory garlic and parmesan, the brightness of the lemon, the greenness of the kale. It was also a huge bonus that the dish looked super simple to make. It turned out just as I’d hoped!
I boiled thinly sliced kale leaves until tender, then removed them from the water with a sieve and drained.
I put the spaghetti in the kale water and boiled until al dente.
I cooked minced garlic in olive oil until fragrant.
Then added the kale, lemon zest, salt, and pepper.
I stirred in the spaghetti, more olive oil, lemon juice, and parmesan, and seasoned with more salt and pepper to taste. This step was where I ran into a bit of difficulty – the kale tended to stay together in clumps and I had to work pretty hard to get it evenly distributed among the pasta.
I finally gave up, topped with more parmesan, and it was ready to serve! Simple, yet nice layers of flavor – I will be making this one again.
