This dish uses just a handful of ingredients and a single pan, but the flavors of the sausage, kale, and tomato go so well together that you don’t need anything else. My boyfriend says it’s like a really delicious pasta, only without any pasta – that’s a glowing endorsement from someone who would live on an all-carb diet if left to his own devices.
Guessipe
- 2 spicy Italian sausages
- 5 cloves garlic, sliced
- 1 small red onion, sliced
- 1 bunch kale, tough stems removed and leaves chopped
- 28-oz can whole tomatoes
- salt and pepper to taste
Remove the sausage meat from its casing and saute over medium heat until it begins to brown.

Add the garlic and onions and cook until the onions soften.

Add the kale and tomatoes (including the liquid from the can). Break the tomatoes into quarters. Stir and cook until the kale gets tender.

Salt and pepper to taste. Super yummy served with a good toasted bread, but also hearty enough that it can just be eaten alone.
