Long beans are sort of like green beans, but super long! You can get them at the Asian market. They have a bit more crunch and firmness and hold their color better when stir-fried, so if you can get them it’s nice to mix things up every now and then. But if you can’t, green beans work fine too.
Guessipe
- 1 TBSP neutral oil for frying
- 5 red chilies, minced
- 1/2 tsp Sichuan peppercorns
- 1 lb long beans, trimmed and cut into thirds
- 1 TBSP sugar
- 2 TBSP sesame oil
- 1 TBSP soy sauce
- salt to taste
Fry the chilies and Sichuan peppercorns over medium heat until fragrant.

Add the long beans and cook for about 3 minutes.

Stir in the sugar, then remove from heat.

Stir in the sesame oil and soy sauce. Salt to taste.
