I’m a big proponent of minimizing food waste by using as many parts of produce and animals as possible. So next time you cook with squash, don’t throw those seeds away! Roast them for a tasty snack. You can do this simply with olive oil and salt, but I like to zing it up a little with this spicy sweet version.
Guessipe
- 1 cup squash seeds, rinsed and dried
- 1 TBSP olive oil
- 1 tsp salt
- 1 tsp sugar
- 1/8 tsp cinnamon
- 1/8 tsp allspice
- 1/8 tsp cardamom
- 1/8 tsp cayenne
Mix all ingredients to evenly coat the seeds.
Spread evenly on a baking sheet. Bake at 275 degrees F for 15 minutes, stir and bake another 15 minutes.
