Cookbook Club – Brian Lagerstrom

I was excited to try the Street Corn (Elotes inspired) Salad because the elote I make is a household favorite that’s great for my husband and I, but not so manageable to make for a bigger crowd (grilling and coating each cob is time consuming and a bit messy). A version not on the cob seemed like a good alternative, especially since I used canned corn rather than cutting the kernels off fresh corn.
I caramelized the corn with a little oil over high heat until it began to pop.
I transferred the caramelized corn to a bowl and allowed it to cool slightly, then added jalapeno, green onion, cilantro, lime zest and juice, garlic, mayo, sour cream, pepper, chili powder, and cotija cheese.
I stirred it all up, adjusted with more lime juice and salt, and garnished with additional cotija cheese.
My husband agreed it wasn’t quite as good as my elote 😉 but I’d take it to a party spruced up with a lot more cotija and a touch more sour cream.
