With the warm weather, I was craving a salad that was hearty enough to be a meal all on its own. I had some tortilla chips and salsa I wanted to use up, and that inspired the idea to make a Taco Salad. After tasting the salad, my boyfriend – who previously swore he hated black beans – declared that we should go buy more black beans to make stuff with… so I’d say the meal was a success!
Guessipe
- oil for sautéing
- 8 oz ground beef
- 1 can black beans, drained
- 1 packet taco seasoning
- red leaf lettuce, torn into bite-sized pieces
- jicama, cut into matchsticks
- tomato, chopped
- red onion, thinly sliced
- jalapeno, minced
- cilantro, chopped
- cheddar cheese, shredded
- tortilla chips, broken into pieces
- your favorite salsa
- Caesar dressing
Sauté the ground beef until it begins to brown. Add the black beans and taco seasoning and continue to cook until the black beans are heated through and the beef is browned.
In a large bowl layer lettuce, jicama, tomato, red onion, jalapeno, cilantro, cheese, and the beef mixture.
Drizzle with salsa and Caesar dressing. Top with chips.
