We’re in the midst of summer right now, and it’s just too hot to be cooking and eating a hot meal. I was craving a salad that was hearty enough to be my dinner, but cool and refreshing to eat in this heat. While not an exact match for any traditional Thai salad, I used what I had to make something inspired by the Thai flavors I love, and it turned out to be exactly what I needed.
Guessipe
- olive oil for stir-frying
- 4 cloves garlic, thinly sliced
- 1/2 lb ground pork
- 2 TBSP + 1 tsp sugar
- 2 TBSP + 1 tsp fish sauce
- 3 Thai chiles, minced
- salt and white pepper to taste
- 3 TBSP lime juice
- 1/2 onion, thinly sliced
- 3 carrots, julienned
- 1 English cucumber, thinly sliced
- 1 bunch cilantro, chopped
Stir fry the garlic, ground pork, 1 tsp sugar, 1 tsp fish sauce, and 1 Thai chili over medium-high heat until the pork is browned. Add salt and white pepper to taste and set aside.
In a small bowl, stir together 2 TBSP sugar, 2 TBSP fish sauce, 2 Thai chiles, and 3 TBSP lime juice.
Put the onions, carrots, cucumbers, and cilantro in a large container or bowl.
Toss in the pork and dressing. Delicious alone or served over rice!
