Cookbook Club – Santa Monica Farmers’ Market Cookbook
For June’s Cookbook Club, we used the Santa Monica Farmers’ Market Cookbook by Amelia Saltsman. I chose the Ultimate Pucker Lemon Bars. Go to my Cookbook Club site to see all the Farmers’ Market food people made for the event. For now – my dish!
This recipe starts by saying “Most lemon bars just aren’t lemony enough, but this one is.” That was enough to grab me. They’re also really easy to make.
I mixed together flour, powdered sugar, and salt.
Then I cut half-inch pieces of butter into the mixture with my fingers.
I pressed the mixture into the pan and baked. While the crust baked, I whisked together eggs, sugar, lemon juice, lemon zest, and flour.
I pulled the lightly browned crust out of the oven, poured the lemon filling on top, and popped it back into the oven to bake until set.
I let it cool and cut it up – that simple!
These are not the best lemon bars I’ve ever had in my life, but they are tasty and easy – great for when you need a last-minute dessert for a party.
