It’s that time of year again… March 14… in other words, my favorite holiday – Pi(e) Day!! My Pi(e) Day party has now become an annual event, which I’m delighted that people are excited to celebrate with me no matter what random day of the week 3.14 might fall on. Since I require everyone to bring a homemade pie (no store-bought nonsense at my party!), I figure I better step up my game and try to invent a new pie every year.
I was visiting my Aunt Cathy a few months ago, and she had a 6-pack of Lee’s Sandwiches iced coffees, which I’d never seen before. For those who don’t know, Lee’s Sandwiches is an awesome chain of Vietnamese sandwich shops (banh mi), which also serves some kickass Vietnamese iced coffee. You used to have to order the iced coffee in their shops, but apparently now you can buy 6-packs of the fabulously strong and sweet concoction. I now find myself constantly craving Vietnamese iced coffee, and decided it would be fun to try to recreate the flavors in pie form.
Guessipe
- 1 pie crust
Filling
- 1 box (3.4 oz) chocolate pudding mix
- 3/4 cup strong coffee, room temp
- 1/2 cup milk
- 1 cup heavy cream
Topping
- sweetened condensed milk
Bake a store-bought crust, or make your own. This time I made my own (under the tutelage of my fabulous chef friend, Alyssa!), but I’m not gonna lie… I usually just use store-bought.
In a small pot, combine the pudding mix, coffee, and milk. Bring to a boil, stirring constantly. Set aside to cool.
Whip the cream.
Whisk together the cooled pudding and the whipped cream.
Spread the filling into the baked pie crust.
Top with a thin pool of sweetened condensed milk. I tried semi-successfully to make a flower like baristas do with fancy latte art (in the theme of coffee). I think with a little more practice I could get this to look pretty good! Chill in the refrigerator.
