Warm Spinach Salad

Warm Spinach Salad always makes me think of eating in a nice restaurant. But do you know how much extra effort it takes? …about 30 seconds! If you put dressing on some spinach leaves and throw them in the microwave for half a minute, you can serve what seems like a fancy salad and class up a meal with ease. I love that. Something about a warm spinach salad feels comforting but healthy at the same time. It works great with whatever dressing you love, and you can mix and match toppings (other veggies, slices of hard-boiled egg), though I’d stick with at least the bacon and sautéed mushrooms.

Guessipe

  • 1 bunch spinach
  • your favorite salad dressing
  • 4 carrots, sliced
  • 3 slices bacon, cooked and crumbled
  • 6 mushrooms, sliced
  • 1/4 red onion, diced

Trim the spinach stems (don’t throw them away – check out my Spicy Spinach Stems Guessipe). Put the spinach leaves in a microwave-safe bowl and drizzle with your favorite salad dressing (I like to use the dressing from my Lettuce-less Salad Guessipe if I have some leftover). Nuke for 30 seconds.

Cook the bacon, then sauté the mushrooms in the bacon grease. Add the bacon, mushrooms, carrots, and red onion. Stir and enjoy!
