Zucchini is awesome for stir-fry because it soaks up the flavors of the sauces so well. In this case I just use a handful of sauces and seasonings that I always have on hand. Great for when you need a quick but satisfying weeknight meal.
Guessipe
- olive oil for stir-frying
- 5 cloves garlic, minced
- 1 red onion, chopped
- 1/2 lb ground pork
- 3 zucchinis, halved lengthwise then sliced into 1/2-inch pieces
- 4 TBSP oyster sauce
- 2 TBSP rice wine
- 1 TBSP soy sauce
- 1 TBSP chili garlic sauce
- 1 tsp sugar
- salt and white pepper to taste
Stir fry the garlic and onion over medium-high heat just until the onions begin to get translucent.
Add the ground pork and cook until the pork starts to brown.
Add the zucchini, oyster sauce, rice wine, soy sauce, chili garlic sauce, and sugar. Stir fry until the zucchini softens but remove from heat before it gets mushy.
Salt and white pepper to taste. Serve over rice.
